Temporary Suspension

Due to an illness in the family, I have to temporarily discontinue most of my postings on this blog. I’m afraid I will not have the time to go out scouting around for new restaurants or new dishes at old favorites. Of course, if something comes my way, Ill post it or if any of my readers have little tidbits of news about eateries or the world of foodies in general, I will be delighted to post it. Just sent them to me at Tidbits@savannahbest.com.
Hopefully, I will be back in stride soon!

Blowin’ Smoke is blowing good stuff

Lots of us were happy when Blowin’ Smoke moved to the new Habersham location. And as an added bonus to not having to drive all the way to MLK, they added some delightful goodies to the menu. Since I love fish and love tacos, the blackened fish taco caught my eye right away….and proved to be every bit as good as I’d hoped. I’ve eaten so much Tilapia over the past fw years, I thought I’d grown tired of it…but not THIS tilapia! The beautifully seasoned blackening mix adds such good flavor, and the portion is large, to put it mildly! The addition of a mole sauce was perfect. My dining companion had the pulled pork enchilada with mole sauce. Seemed a bit more like a burrito than an enchilada, but purely delicious.

Papillote As We Have Known It…

It was a week ago yesterday. Jack came home with dinner for us. He looked distraught, sad, quite unlike himself. I asked what was the matter. He looked at me. “Papillote as we have known it will soon be gone,” he said. I stared at him. That’s impossible, I said. They just celebrated their fourth anniversary in Savannah. They’re doing a fabulous business. How could they be closing?
They have sold the business. They are leaving Savannah. But you must promise to say not a word, don’t even think of publishing anything about it, until after they are gone. I promised Herve, he said, that I would keep it a secret.
And so I did….until today, when I discovered that it’s all over Twitter. All I can say now is that I’m as heartbroken as Jack.
I take comfort, however, in the certainty that Chef Herve would not sell his small creation to anyone unless he believed that they would maintain the standards that he set for excellence. According to Chef Herve, the new owners intend to keep the same menu, perhaps adding a few new dishes of their own. Tomorrow will be the last day for Papillote under the auspices of Chef Herve and his partner Ann-Marie. Sunday, they will be closed for the transition. The new owners will re-open next week, probably Tues. or Wed. I wish them well.

An Ode to Soft Shelled Crab and to Chef Chris DeNello

Soft shelled crab has been one of my five most favorite foods ever since I first tasted it some 25 years ago. So of course, when I saw it was among the specials a few nights ago at Alligator Soul, I immediately ordered it. These wonderful little creatures are only available about once a year, so when they are, I grab them! These proved to be, unquestionably, the very best I have ever eaten, any time, anywhere. Chef Chris DiNello’s amazing artistry in the kitchen never fails to astound me. These marvelous morsels were sautéed w/Seasoned Georgia Peanut, Organic Local Ground Ginger and L cal Corn Meal Flour. House made Kim Chi, Lemon Dressed Local Organic Red Sorrell, Cajun Steamed and Grilled Crawfish, Spiced Bourbon Caramel rounded off the dish, which was served with Creamy Freeman Mills Stone Ground Grits.

Skyler’s — A Not So Hidden Gem?

When first one, then two, friends both food lovers, told me they’d had a fabulous dinner at Sklar’s, I was at first surprised, then intrigued. I’d heard of the place, probably walked past it a hundred times on Bay St., but paid little attention. So now, I called around to other restaurant-going pals to see if anyone else had ben there. Not many had, but those who’d actually gone there had nothing but praise. I discovered that the place is owned by a couple–he a born and raised Southerner from Atlanta, she from Vietnam. And that they often meld their cuisines together . For instance, a petite filet mignon with an a sauce that hints of Asian flavors, friend shrimp with a light as air tempura batter…Every one I talked to mentioned the crab cakes, much lighter than the traditional ones, and someone mentioned a delicious lemongrass-flavored chicken.
Several people also mentioned that the service leaves much to be desired, but the food makes that almost irrelevant. I’ll be checking it out one day soon!

The Elusive Quiche of Chef Herve

Papillote’s makes a lot of good eats, including plenty of delicious quiches. Some weeks ago, however, the Daily Specials included a quiche that sounded extra wonderful to me – one with smoked salmon and asparagus. My husband did as he often does and went downtown late in the afternoon and picked up one of these quiches, plus a few other goodies. That night, it was love at first bite. The blended flavors of asparagus and smoked salmon are a mixture made in heaven. The crust of this quiche is the lightest, most delicate I’ve had in many a year.

I vowed to keep a close eye on the Specials menu so as not to miss this one. More than a week passed before it reappeared, and I asked Jack to go and pick one up. He did. Alas, they had already sold out.  I guess I wasn’t the only one to fall in love, I said. Next time it appeared, Jack called in advance to ask them to save one for us. They had already sold out.

It was at least two more weeks before it reappeared on the menu.  Then, yesterday, there it was again. This time, we called and called and called. The line was constantly busy. Jack was going downtown anyway, and I pushed him to go early, so he showed up by 4 pm. No more quiche. But today, the chef had made some more. The minute I saw these elusive quiches on line, I called out to Jack. “Pick up the phone and call. They have more quiche!”  Jack called. Papillote was already sold out. It was only 2 pm!  If I ever get another of these deliciously vanishing quiches into my mouth, I’ll let y’all know.
