Roasted Quail: a dish not to be missed!

Leave it to Alligator Soul’s Chef Chris DiNello to come up with  one of the most spectacular dishes we’ve eaten in quite a while.  With a venison stuffing, this herb roasted quail sports an organic fig preserve glaze.  Served with rabbit and pancetta dirty wild rice and butter braised seasonal vegetables, this unbelievably delicious dish is topped off with a garnish of an organic peach balsamic reduction.  Altogether an incredible version of the always delightful delicate quail!

A Deliciously Frugal 10-day Culinary Binge

The first ever Savannah Restaurant Week, February 26 to March 7, offers a delightful chance to sample Savannah’s finest food in some of our loveliest restaurants. At the top of our own list is Alligator Soul, at 114 Barnard St., where renowned chef Chris DiNello will serve a three course dinner– appetizer,  main course and desert– featuring a selection of his unique and delectable dishes all for the fixed price of $30. New, ever more affordable bar menu

Ever sensitive to the problems of others, Maureen Craig and Chris Dinello, owner and chef of Alligator Soul are now providing a new, even more economy-friendly menu,  served in the bar and lounge every evening. With dishes like Beef Roulade,  Shrimp and Grits,  and Seared Tuna, among a dozen delectable dishes,  patrons enjoy the same fine cuisine as that served in the main dining room, but at far lower prices,  ranging from $9 to $12. This is truly a sensational deal at one of Savannah’s finest restaurants! We say, don’t miss this!

New Bar Menu at Alligator Soul

Here’s a great opportunity to sample the fine cuisine dished out by Alligator Soul’s chef, Chris Dinello. They’re now featuring a brand new bar menu, served only in the bar/lounge area.  Small plates of a wide variety of delectable food,  ranging from beef to seafood to salad, and most everything in between. One such mouthwatering dish is the  Beef Roulade au Poivre rolled with  Stilton Bleu Cheese, Wild Mushrooms, Roasted Pepper, Baby Spinach, and Sundried Tomatoes. Served over Vodka and Honey Braised Leeks and Drizzled with Demi Glace  and Cream.  Another is Shrimp and Grits, Lemon Butter and Creole Spiced Sauteed Georgia Wild Shrimp served over Georgia Stone Ground Grits with Tasso Ham and Cheddar Cheese.  These and most dishes at $14. Alligator Soul’s Maureen Craig

Maureen Craig, owner of Alligator Soul and among Savannah’s most gracious, generous and kind restaurantures, threw a party for friends and associates to “get us all out of our economic doldrums” at least for an evening. Fine food, lovely wines and great company did just that for a huge crowd. Kudos to Craig and to  Chef Chris Dinello!
