Soul-Warming Winter Soup

 Cima’s Body and Soul-Warming Winter Soup    —  Quick, Easy and delicious!                                                                                       

 1 Beef marrow bone (make sure it’s a bone with a good sized hole filled with marrow).

1 quart  each beef broth and chicken broth

Small head of cabbage – either green or red

1 Andouille  sausage

1 small onion

2 garlic cloves

Note: the marrow bone is optional (they’re frequently difficult to find) but adds a wonderful deep rich flavor.

Brown the marrow bone lightly in bottom of soup pot. Add a bit of olive oil if necessary. 

Cut the sausage into large bite size pieces and brown lightly

Add all the broth 

Cut the cabbage into large chunks and toss into pot . 

Cut onion in quarters and add.

Peel the garlic and add to pot. 

Let the whole thing simmer for 1 to 2 hours.  Serve with good French or Italian bread on the side.   Smile!
