Sol Fusion speeds into high gear

Andrea Johnson,  Sol Fusion owner/manager took her time before making any major changes in Sol, which under the ownership of founder, Shelley Smith, had been one of those rare Instant Success stories.  But three  weeks ago, Andrea launched a new menu and the new name. Now, very soon, she and her co-owner husband will be closing on purchase of the building that houses the restaurant. Following this closing will come the renovations: expansion of outdoor tables and the addition of an outdoor bar; re-doing the entry  way to accomodate more seating, and adding a second bathroom!  In addition to adding more space for increasing numbers of happy patrons, chef Aaron Doyle keeps coming up with spectacular specials! Last night’s Curried Cauliflower Soup, for instance, and the Ancho spiced Lamb Tacos with mint mojo, cucumbers, shredded cabbage, crisp pea strips and cumin yogurt sauce were simply spectacular!
