The best salad I’ve eaten in recent years came not from a restaurant, nor from my own kitchen, but from Fresh Market. They call it their Greek salad. It bears little resemblance to a traditional Greek salad which consists of tomatoes, onions, cucumbers, peppers and sometimes other veggies, but never a leafy green. This salad is all romaine with a bit of radicchio, a few mushrooms, and lots of Kalamata olives. What makes it is not just the freshness of these ingredients, but the abundance of Feta cheese. Not the crummy crumbly flavorless Feta found in your average supermarket, but chunks of genuine, fresh, delicious Feta that comes packed in its own liquid. The whole works is tossed in a lovely Feta-thickened Greek vinaigrette. One order of this at $5.99 is a bargain for two people. Some good bread, a glass of wine….
